What to Expect
A private, on-site five-course dinner hosted in the Coach House at Nick Lake Lodge.
Chef arrives on-site
Chef Ray and his team fully stage the Coach House for dinner. You don't need to prepare anything in advance.
Relaxed & unhurried
Dinner is paced per your group's preferences. The evening is designed to feel easy, comfortable, and memorable.
5 full courses
The dinner will include a starter, soup, salad, main course, and dessert, served in that order. Each crafted with fresh, locally sourced ingredients.
Full cleanup included
Chef Ray and team handle everything after dinner. Just sit back and enjoy the sunset over Nick Lake.
BYOB welcome
Guests are welcome to bring additional food and beverages to complement the experience.
Exclusively yours
Dinner is served privately for your group in the Coach House. Panoramic lakefront views from the hilltop, all yours.

Your Chef
Meet Chef Ray
Chef Christopher Ray is a Certified Chef with the USPCA and a member of the World Association of Chef's Societies. His approach is grounded in true farm-to-table cooking, built on strong relationships with regional Wisconsin farmers and producers who supply the fresh, local ingredients that define his food.
Chef Ray began his career on the piers of Seattle and went on to build a respected culinary presence across the Twin Cities and beyond. He has written two books on game cookery and is known nationally for his clean flavors, attention to detail, and genuine hospitality.
His partnership with Adam, owner of Schliesmann Estates, is built on shared values. Together, they believe that great food, warm hospitality, and a Northwoods setting create the kind of moments families remember.
